Taco Soup

This is the maiden recipe post - and it is already a disaster. My original goal was to include pictures outlining the steps for this simple soup so that any beginner (my daughters) could follow the recipe and pictures. Well, after taking over 30 pictures for this recipe - I had to take numerous shots as I am not tall enough to see over the large stock pot (stop laughing). I had the photos and the finished soup...now for the blog post. But wait! I have to transfer the pictures to the computer. So, I fish out the photo card and try inserting it into various and sundry places on the computer tower. Apparently this computer does not have a specific location for a photo card and I could not shove it in any other space.

Next step, digging in the closet for the camera bag. Success! Once I managed to locate the "transfer images" section in the index, I discovered that I do not have the proper USB cord to transfer the pictures. Failure.

But, I refuse to succumb to the terrors of technology this early in the game! I WILL post the recipe and tomorrow after I fight the crowds of humanity at Wal Mart, I WILL post my pictures! Such is the power of positive thinking!

Now, for the recipe (adapted from Paula Dean)...


  • 1 lb ground beef 
  • 1 cup chopped sweet onion
  • 1 can pinto beans (drained)
  • 1 can black beans (drained)
  • 1 can kidney beans (drained) 
  • 1 small package of frozen corn
  • 1 can Rotel
  • 1 small can of diced green chiles
  • 1 can tomato sauce
  • 1 package taco seasoning
  • 1 package Ranch dressing mix
Brown the ground beef and onions (image a picture of beef browning and onions sweating). Drain the meat, if necessary. Once the beef is browned, dump in the following ingredients: all the beans, frozen corn, Rotel, green chiles, tomato sauce, taco seasoning, and the Ranch dressing mix (image a picture of a large bowl of beans and tomatoes along side the taco and Ranch packages). Stir completely and let simmer. This soup is best when it is allowed to rest - easily made the day before and heated before serving. Add some sour cream, cheese, and guacamole to each bowl before serving. It is quite tasty on a winter evening or whenever you need some soupy comfort.
So...begins the blog. Actually, this is my (insert large number) time at attempting to create a blog. I have no technological intelligence and have actually caused a computer to smoke at one point. I truly believe that I have some genetic anomaly that is incompatible with technology. I am sure that my colleagues and Technology Director can attest to this fact. And yet, I have managed to fall into a white-rabbit-tangent-hole before I even finished my first paragraph. If anyone is still reading this, my apologies. 

As with many great ideas (think Communism in its pure form),  the application of an idea might actually be its downfall (again, think Communism - in practice). The current brain thrust for this activity is for my children (mainly the girls because I doubt my son has any real desire to make anything other than eggs in the kitchen). I wanted to create a digital cookbook - one that would be easy to organize, maneuver, and stand the test of time (a.k.a. how on earth can I corral the multitude of recipes and cookbooks on the shelves in my kitchen). Hence, this new post, update, attempt at being technologically savvy.
